So - THROW AWAY that deep pan of oil for your Krupuk Udang (Prawn Crackers) – check out the healthy low-fat way to bring these tasty traditional chips from Nusantara Cuisine.
1. Find some volcanic sand – or heavier grit will work well
2. Clean it with a sieve to remove all the very small pieces and take out any large piece – the grains should be between 2mm and 3mm in diameter
3. Heat the sand and sieve again
4. Wash the sand and then keep it ready for use
5. Heat the sand in a wok and use this to cook the prawn chips
6. Put in 2-3 prawn chips at a time and leave under the super-heated sand for 1-2 minutes stirring occasionally
7. After the prawn chips are cooked flatten them with a spatula and remove any excess sand by brushing lighting and tapping away any residue sand
8. The flavor is stronger than deep fried crackers – they last just as long and add that extra special taste to a healthy brown rice Nasi Goreng (again not fired!)
